This method of broiling allows you to broil without oil, and it is very fast and efficient, sealing in the juices of the chicken breast. Preheat broiler on high and place an empty stainless steel skillet about 7 inches from the heat source to get very hot, about 10 minutes. Use a skillet that has a metal handle so it doesn't burn. Leave skin on breast to broil. Season chicken breast with a little salt and pepper and place it skin side up on the hot skillet. Return to broiler. Cook for about 15 minutes. Remove skin from chicken before serving.
